What could be better as the nights draw in than the comforting embrace of a rich and wholesome Dal. This version incorporates spinach for an added dimension. Our own version of Dal is one of our most popular dishes, please enjoy this one at home, or order a takeaway from PP!

INGREDIENTS
(Serves 4)

Lentils
300gms (Chana dal)
Water – 2 litres
Turmeric powder – 2gms
Salt – 10gms
Chopped garlic  – 40gms
Chopped ginger – 10gms
Green chilli chopped – 10gms
Cumin seeds – 4gms
Tomato chopped  – 125gms
Onions chopped –200gms
Oil – 60ml
Fresh spinach chopped – 150gms Butter – 20gms

METHOD:

1)Place  dal (lentils),  water,  turmeric  powder  and  salt  in  a  pan  to  boil, skim  the
top and then simmer until the lentils are cooked al-Dante (firm to bite).

2)Heat the oil in a pan then add the cumin seeds and let them crackle.

3)Add in  the chopped garlic  and cook  till  it  turns  golden  brown  then  add
the chopped onions and brown them.

4)Mix in the chopped ginger and green chillies, stir and let it cook for 2 minutes
then finally add the chopped tomatoes.

5)Cook the masala until it forms a  nice paste and the oil should start to accumulate on the sides then add the chopped spinach stir for a minute then add the dal to the masala.

6)Bring to the boil and then cook on low heat.

7)Finally add in the butter and mix.

8) Check the seasoning and serve hot.
